Parsley in Salt Water

These greens, which represent the bounty of the earth, was also eaten as a relish by free people in olden days. But, before we eat it, we dip it into salt water so we can remember the tears with which our freedom was bought, so that we can remember the tears that are shed on this day by those who do not know freedom.
