On the modern seder plate, z’roa is represented by a roasted lamb shank bone.</p>\n<p>Developing a z’roa cocktail was one of the biggest challenges in creating The Sipping Seder. Rather than focus on the symbolic bone, we turned our thoughts to the origin of the custom. We crafted a deep, crimson cocktail to remind us of the blood of the sacrificial lamb.</p>\n<p>Our recipe is a variation on St. Charles punch, which originated in New Orleans and appeared in the 1862 edition of Jerry Thomas' famous bartending guide. Both symbolize the bitterness and harsh conditions the Jews endured as slaves in Ancient Egypt. For maror, the first bitter herb, many people use freshly-grated or whole horseradish root.</p>\n\n<p>Our maror cocktail is basically a “borscht martini.” We didn’t invent the idea, and we’ve heard murmurs about various incarnations of the drink for the past couple of years. Double Cross Vodka promotes a recipe for one. Eastern Standard in Boston had something similar on their menu a while back. Camper English has written about both on his Alcademics blog.</p>\n\n<p>Our version comes to The Sipping Seder for three reasons. This is our favorite cocktail involving horseradish. We absolutely love beets. And, our recipe takes an interesting turn on the concept. We base our version on golden beets and use a red beet garnish so that the drink gradually changes color as you sip. It’s beautiful and a lot of fun to watch.</p>\n\n<p>Ingredients:</p>\n\n<p>3 oz (90 ml) Belvedere Vodka</p>\n\n<p>1 Small Golden Beet – raw, peeled</p>\n\n<p>1 Slice Fresh Horseradish – peeled, about the size of a quarter (25 x 25 x 2 mm)</p>\n\n<p>Fresh Red Beet – raw, peeled, for garnish</p>\n\n<p>Directions:</p>\n\n<p>1) Cut the golden beets and horseradish into small pieces and muddle thoroughly in a mixing glass with half an ounce (15 ml) of the vodka.</p>\n\n<p>2) Add the remaining vodka to the mixing glass and fill 2/3 full of ice. Shake vigorously.</p>\n\n<p>3) Strain through a fine mesh strainer into a chilled cocktail glass.</p>\n\n<p>4) Garnish with a stick of red beet (about 1/8” x 3” or 80 x 5 mm) at the moment of serving.</p>\n\n<p>Notes:</p>\n\n<p>We suggest slipping the beet garnish into the cocktail as you serve it. The red color will begin to bleed out into the yellow liquid immediately. It is typically represented by romaine lettuce, whose roots taste bitter. Like maror, it reminds us of the severity of a life lived in slavery.</p>\n<p>We thought about it quite a bit, but a lettuce-based drink just didn’t hold much appeal for us. Instead, we decided to take a more abstract approach to our chazeret cocktail. The recipe is based on Cynar. This Italian liqueur is made from artichokes and has a flavor profile that certainly fits with the idea of eating bitter plants.</p>\n<p>The inspiration for our recipe came from the special Passover-themed menu at Perbacco in San Francisco in 2008. The project was a collaboration of Perbacco Chef Staffan Terje and Chef Joyce Goldstein, author of <i>Cucina Ebraica: Flavors of the Italian Jewish Kitchen</i>. Following Sephardic traditions from Italy, many of the dishes offered included artichokes. Over the lovely meal, it was a running comment at our table that the thistly nature of the artichoke was an interesting representation of the Jewish experience throughout history.</p>\n<p>The garnish also has a special significance. For the past 30 years or so, progressive Jews have added an orange to the seder plate. The practice references an incident in which someone asked an orthodox rabbi when women would be allowed to bless the Torah. He replied, “Women belong on the bima like an orange belongs on the seder plate.” The custom began in response, and it’s a tradition of inclusivity we were proud to bring into The Sipping Seder.</p>\n<p><span><b><br /> </b></span><b>Ingredients:</b></p>\n<p>1 oz (30 ml) No. 209 Gin</p>\n<p>½ oz (15 ml) Carpano Antica</p>\n<p>½ oz (15 ml) Cynar</p>\n<p>¼ oz (7 ml) Fresh Lemon Juice</p>\n<p><span><b><br /> </b></span><b>Directions:</b></p>\n<p><i>1) Combine all ingredients in a mixing glass.</i></p>\n<p><i>2) Fill 2/3 full of ice. In the Ashkenazi tradition of our families, charoset was usually composed of walnuts, honey, apples, cinnamon and red wine ground into a gravelly paste.</p>\n<p>Our liquid approach to charoset is fairly simple. Rather than concern ourselves with each of the ingredients, we wanted a flavor profile that would arouse the sense memory of this childhood favorite.</p>\n<p>The recipe is based heavily on the manuka-honey-flavored vodka from 42Below out of New Zealand. We don’t often pay much attention to the overcrowded landscape of flavored vodkas on the market, but we’re extremely fond of this one. We were first introduced to it at Paper in Beijing, where the bar manager was having a lot of fun experimenting with the stuff. It is usually parsley, but celery or cooked potato are sometimes also used. At the beginning of the seder, the karpas is dipped into salt water (Ashkenazi custom), vinegar (Sephardic custom) or charoset (Yemenite custom). The practice symbolizes the tears shed by enslaved Jews in Egypt.</p>\n<p>Following a fairly literal approach, our karpas cocktail involves parsley and balsamic vinegar. We combine these with Leopolds's American Small Batch Gin, which has some light flowery flavors that pair well with the subtle vegetal taste of the parsley. We definitely suggest using flat or Italian parsley instead of the curly variety, which we found a bit bitter. The effect of the vinegar is subtle, but it adds a nice complexity to the brighter flavors.</p>\n<p><span> </span>Ingredients:</p>\n<p>2 oz (60 ml) Leopold’s Gin</p>\n<p>2 sprigs Flat or Italian Parsley – leaves only</p>\n<p>3 drops Balsamic Vinegar</p>\n<p><span> </span>Directions:</p>\n<p>1) Combine all ingredients in a shaker with ice. It is represented by a baked egg and symbolizes our sorrow at the destruction of the Temple along with the hope that it will be rebuilt. </p>\n<p>The nature of the egg also speaks to the potential of the spring season in which Passover is celebrated. Many scholars believe it was a pre-existing pagan tradition which was absorbed into the seder ritual. This would explain why it sits on the plate without ever being used or referenced. It is likely the origin of beitzah is similar to that of the Easter egg, which also lacks a specific role in its holiday.</p>\n<p>Crafting an egg-based cocktail to represent beitzah was an obvious choice, but the number of possible variations to think through was a real challenge. We considered numerous approaches, but thought it was most important to find a flavor profile to fit well with a Passover theme. Our solution is an interesting balance of ingredients. We think it rounds out The Sipping Seder nicely.</p>\n<p>Ingredients:</p>\n<p>1/2 oz (15 ml) Laird’s Bonded Apple Brandy</p>\n<p>1/2 oz (15 ml) Bulleit Bourbon</p>\n<p>1/2 oz (15 ml) Benedictine</p>\n<p>1/2 oz (15 ml) Galliano</p>\n<p>1 Egg White</p>\n<p>Directions:</p>\n<p>1) Combine all ingredients in a mixing glass and shake vigorously without ice.</p>\n<p>2) Fill 2/3 full of ice and shake vigorously for an additional 60 seconds.</p>\n<p>3) Strain into a chilled tulip-shaped glass.</p>\n<p>Notes:</p>\n<p>As with almost any egg-based drink, shaking is the key to this cocktail. The “dry shake” (without ice) in the first step will improve your results significantly.</p>\n<p>If you have an extra Hawthorn strainer, remove the spring and place it in the shaker.
